Scotcharoos are a perfect combination of butterscotch and peanut butter with a twist of a Rice Krispie crunch in the middle and a thick, rich chocolate layer that makes an irresistible treat. Sink your teeth in these ooey gooey bars! Peanut butter-chocolate combination bars are always a hit in our family. This chocolate peanut butter bars or crunchy peanut butter bars are also very similar to these scotcharoos and have the same great flavors.

You just never know when you are going to need a sweet treat with a little crunch! This chocolate peanut butter bar is just what the doctor ordered. No bake is the best bars year round and makes it even simple for kids to help make in the kitchen. Microwave the chocolate or use the stove top for easy melting. While melting the chocolate measure out the Rice Krispie cereal for a hidden crunch in the bars. Because I like my bars more gooey, I only add in 5 cups instead of 6. Make them just the way you like! Peanut butter with Rice Krispies and butterscotch and chocolate chips melted together make for a tasty treat! My family loves these and they usually disappear before we can share them with neighbors. We love to have these after dinner for a quick treat or put them in lunch boxes the next day. They are just the right amount of sweet and a hint of salty with the Rice Krispie cereal. That added crunch gives these bars that extra texture and thickness. Add these to your dessert list for sure!

Scotcharoos Ingredients:

Peanut Butter: Creamy peanut butter is best and smooth when mixing together. Sugar: This sweetness helps bind everything together. Light Karo Syrup: Thick and rich syrup that will hold it all together like glue for these bars to hold their form. Rice Krispie Treat Cereal: The peanut butter-sugar mixture is stirred in the cereal that is rich, thick and crunchy.  Butterscotch Chips: Melt these down and add to the chocolate melts. This is the “scotch” part of the scotcharoos. Semi-Sweet Chocolate Chips: Microwave or melt on the stove top for a thick chocolatey-buterscotch layer over top.

You can also make the mixture on the stovetop, just be careful not to over cook or the bars will be hard.  Just melt until the sugar has dissolved.

More About Scotcharoos:

Peanut butter: It is best to stick to a natural peanut butter but an organic peanut butter will work. Just continue to make the creamy type. If you notice the peanut butter the oil has separated, simply stir and mix together before adding to the sugar. Cereal: If you don’t have Rice Krispies or want to try another substitution, try corn flakes or Chex mix for more varieties. Stove top: When making this on the stove top, make sure that your mixture does not boil or over cook. This will result in having dry or crumbly bars.
